Stuffed Sweet Peppers

I always find something that’s fun to make on Friday night, cause the demands of the work day are nil. While we have dinner at a fixed time on most days, Friday gives a little longer to unwind, and so does Saturday, and I usually keep Saturdays for baking.

I saw so many of these stuffed sweet peppers recipes on the web, that I had to try some. I have mostly tasted them in restaurants, but I’m  trying my hand at them for the first time. And this is one of those recipes, I haven’t tried thrice before blogging. Simply because, they are so easy, so fool proof, and so delicious, that one mustn’t need to wait to try this.

I buy these peppers from an online grocery sight, and there are about 8 peppers little sweet peppers that come in a bag. They also come in assorted colours. I find this ideal. But if I could buy them nearby, I’m someone who would probably try to match their sizes. Well, that’s not to be, and they are so delicious that it doesn’t matter.

There are so many options here with the stuffing, I have stuffed them with two of my favorite ingredients- Feta cheese and Cream Cheese. Together these two are a match made in heaven. I often use this combination in sandwiches too. For an Indian style stuffed pepper, Paneer/Cottage Cheese can be used or even boiled and spiced Potatoes.

Ingredients

  1. Mini Sweet Peppers 8-10 numbers
  2. Feta Cheese block 200 gm
  3. Cream Cheese tub 200gm
  4. Salt as required
  5. Pepper Powder 1 tsp
  6. Peri- Peri Powder 1/2 tsp
  7. Oregano Seasoning 1 tsp
  8. Any herb- Basil, Cilantro, Mint roughly chopped 1 tbsp
  9. Parmesan Cheese 1 tbsp for garnish
  1. Slit the Peppers lengthwise  into half. Deseed them. Now In a mixing bowl take the Cream cheese, and beat lightly with a spoon, and  grated Feta Cheese to it.
  2.  To this add salt, pepper powder, Peri-peri powder/ red chilli powder, some Oregano seasoning, plus any fresh herb,and combine them all nicely. The stuffing is ready.
  3. Now fill this into the slit Sweet Pepper halves, sprinkle some Parmesan cheese on top,and bake it in a Preheated oven at 200 C for 15-20 minutes. Remove from oven,sprinkle with red chilli flakes (optional) or Oregano and serve.

Now fill this into the slit Sweet Pepper halves, sprinkle some Parmesan cheese on top,and bake it in a Preheated oven at 200 C for 15-20 minutes. Remove from oven,sprinkle with red chilli flakes (optional) or Oregano and serve.

Notes:

  1. Since Feta cheese is quite salty, be careful while adding salt.
  2. I have used Pepper powder and Peri Peri powder for seasoning, feel free to use seasoning of your choice.
  3. Since Oven settings are different for different oven, i have given a time range of 15-20 minutes. Keep an eye from 15 minutes onward.
