Red Rice Sweet Poha (with sugar)

Poha(Rice flakes) is my go-to food many times during the week. Sometimes as breakfast and sometimes as dinner and, sometimes as a quick dessert, or as a simple prasad. I like the fact that this humble ingredient is so versatile allowing us to create so many dishes from it. The Poha can even go into the Idli batter to make the Idlis soft and into the Dosa batter to make super crisp Dosas.

I love making this sweet Poha recipe specially with Red Rice Poha. No particular reason,may be the colour and how the whole recipe  comes together. Also I find the red rice Poha to be well for Sweet recipes. I have used these same red Rice Poha in my Red Poha ladoo recipe.

Red Rice Poha has a greater Iron content than the regular Poha, and hence also finds its way into my diet in many ways. It goes into milk in placeof the processed wheat or cornflakes. In these days of work from home, I put the Red rice Poha and Jaggery into a container, to munch when hungry.

Coming to the recipe of Red Rice sweet Poha, it is a quick recipe, gets done in 15 minutes, is healthy,delicious,and what more can one ask for? It is a great lunch box idea also, the sweet version plus a little of the Dahi Pohe will keep kids, as well adults for a longer time.

Ingredients

  1. Red Rice Poha/Red Rice Flakes- 250 gm rinsed (check Note 1)
  2. 1/2 cup sugar
  3. Fresh coconut 1 tbsp
  4. Desiccated Coconut 2-3 tbsp
  5. Cashew nuts a few
  6. Raisins a few
  7. Cardamom powder 1 tsp
  8. Ghee 2 tbsp
  1. To a pan add 1 tbsp ghee and warm it, to this add the cashews and Raisins and fry until light brown. Remove on to a plate and set aside.
  2.  Now to the same pan add another tablespoon of ghee and drop in the grated fresh coconut. Roast the coconut in ghee until light brown. Now add the rinsed Poha,  and mix well.
  3.  Now add the Sugar and Cardamom powder, and mix well, follow this up with desiccated coconut, and finally add the roasted nuts and raisins . Give everything a nice mix and the delicious and healthy sweet Poha is ready.

To a pan add 1 tbsp ghee and warm it, to this add the cashews and Raisins and fry until light brown. Remove on to a plate and set aside. Now to the same pan add another tablespoon of ghee and drop in the grated fresh coconut. Roast the coconut in ghee until light brown. Now add the rinsed Poha,  and mix well. Now add the Sugar and Cardamom powder, and mix well, follow this up with desiccated coconut, and finally add the roasted nuts and raisins . Give everything a nice mix and the delicious and healthy sweet Poha is ready.

Notes:

  1. Red rice Poha or Red riceflakes are very delicate,therefore they must be just rinsed in water and not soaked for a long time. Rinse and drain the water immediately. Let the Poha stand for 5- 10 minutes before using. I used Poha of medium thickness.
  2. If your poha are too thick, then you may want to consider soaking them for 15 minutes.
  3. Using fresh coconut is optional, you can skip that step entirely and just use desiccated coconut.
