Banana Pan Cake 2 Ways

Think Weekend, think Pancakes. Getting up to the aroma of Coffee and warm Pancakes, happens only in movies. In real life, if we want it, we have to make the move to the kitchen to make it ourselves or to order in. Me? I like the former better.

So, on a lazy Sunday morning, its either Pancakes or porridge. I usually make my Pancakes with whole wheat flour, as I find them better taste wise. This time I have added overripe Bananas to them, and they taste super delicious. Adding overripe Bananas, also makes eggs an optional ingredient , as they supply the required binding and moisture.

Usually, when I post a pancake picture on my Instagram or my Facebook page, I get asked for an Eggless version when I say they are regular pancakes and when I make eggless ones, I get asked for the recipe of regular ones. Therefore, in this recipe I am giving both the versions

Ingredients

  1. Whole Wheat flour 1.5 cups
  2. Overripe Bananas 2
  3. Cinnamon Powder 2 tsp
  4. Brown sugar 2 tbsp
  5. Curd/Yogurt 1 tbsp
  6. Coconut Oil 1 tbsp (or use any neutral oil)
  7. Baking Powder 1/2 tbsp (only for with egg version)
  8. Egg 1 (optional)
  9. Baking Soda (only for Eggless version)
  10. Milk 2 cups approx
  11. Vanilla essence 1/2 tsp (optional)
  12. Ghee/Butter for cooking the Pancakes

Banana Pancakes with Egg:

  1. In a bowl mash the overripe Bananas,and keep aside. Now in a bigger bowl take the Whole wheat flour, add the mashed Bananas, Cinnamon Powder, Brown Sugar, Egg, Curd/Yogurt, Baking Powder ,and mix well.
  2. Now adding milk a little at a time, make a smooth and thick batter. Consistency should be like thick Idli batter. I added almost 2 cups of milk. To this add the Coconut oil. Now heat up a Tava/Girdle,and smear some ghee on it.  Pour a little Pancake batter, let it spread itself without the help of a ladle. Now drizzle some ghee/butter over it and on the sides. Flip and cook the other side and remove. Serve with accompaniments your choice. I served with a sprinkleof Cinnamon sugar, and cream and honey by the sides.

Eggless Banana Pancake:

  1. In a bowl mash the overripe Bananas,and keep aside. Now in a bigger bowl take the Whole wheat flour, add the mashed Bananas, Cinnamon Powder, Brown Sugar, Curd/Yogurt, Baking Powder , Baking Soda, and mix well. (I missed clicking the adding of Baking Soda, so please don’t omit if trying the Eggless version.
  2. Now adding milk a little at a time, make a smooth and thick batter. Consistency should be like thick Idli batter. I added almost 2 cups of milk. To this add the Coconut oil. Now heat up a Tava/Girdle,and smear some ghee on it.  Pour a little Pancake batter, let it spread itself without the help of a ladle. Now drizzle some ghee/butter over it and on the sides. Flip and cook the other side and remove. Serve with accompaniments your choice. I served with a sprinkle of Cinnamon sugar, and cream and honey by the sides.

Notes:

  1. I have used Whole Wheat flour, which can be easily swapped with Refined flour/Maida or Multigrain flour.
  2. I have used coconut oil here, which can be swapped with butter/Olive oil/any neutral oil.
  3. For cooking the pancakes I have used ghee. They can be cooked with butter too. Avoid oil.
  4. Berries and nuts of your preference can be added to the batter.
  5. The same withEgg recipe can be followed without Banana,for regular Pancakes.
