The most searched recipe during the Corona Virus Pandemic lock down was the Banana Bread. Therefore I consciously made an effort not to post this recipe during that time. Banana the humble fruit is the one that came in handy from making breads, to pancakes to ice creams during this period. Mainly because, when none of the fancy fruits were available the ever available Banana ruled the roost. Its downside though was its shorter shelf life. This was taken care of by using overripe Bananas in breads and ice creams.

My recipe is very basic and you know my love for one bowl recipes. I have just added some choco chips for the chocoholics at home and some walnuts for me. Brown sugar, eggs, and coconut oil combine to make this bread super moist.

Let’s get to the recipe right away…

Ingredients

  1. Whole Wheat Flour 2 cups
  2. Over ripe Bananas 2-4
  3. Brown sugar 3/4cup
  4.  Eggs 2
  5. Baking Soda 1 tsp
  6. Salt 1/4 tsp
  7. Cinnamon powder 1 tsp
  8. Curd/yogurt 1/2 cup
  9. Coconut oil or any neutral oil 1/2 cup
  10. Vanilla essence 2 drops
  11. Walnuts (optional) a handful
  12. Chocolate chips (optional) 2 tbsp
  13. Ghee/butter for greasing the loaf tin
  1. In a bowl take the whole wheat flour. Add Baking soda,salt, cinnamon powder, and mix well. Transfer to another bowl. Keep aside.
  2. Now in a bowl take the brown sugar, add coconut oil(or any neutral oil), eggs, and curd and whisk them all well.
  3. Now mash the overripe Bananas in a bowl and add them to the creamed mixture. Add vanilla essence,  and sift the flour directly into the creamed mixture and fold well.
  4.  Now add Walnuts, chocolate chips and fold gently. Grease a loaf tin or any 9″X 5″ mold, and pour the cake batter into it. Bake at 200 C for 40 mins. Cover the tin loaf with Aluminium foil lightly. The delicious Banana bread is ready.

Notes:

  1. This recipe is a very basic banana bread recipe, there can be any number of add ins to this.
  2. I have just added some choco chips for the chocoholics at home and some walnuts for me. Brown sugar, eggs, and coconut oil combine to make this bread super moist.
  3.  Since different ovens have different temperature settings keep checking for doneness after 30 mins.
  4. Avoid opening the oven door in between as it affects the rise of the cake/bread.

      Hi Lalitha, Substitute for egg is flax seed powder. For every egg 1 tbsp of flax seed should be added.
